Easy 3-Step Banana Bread

Probably one of my most used recipes of all time. Always a winner!

Prep time: 10mins
Cooking time: 40mins

Make free from:
Gluten: Use gluten-free flour
Dairy: Swap butter and yoghurt for oil and coconut yoghurt
Egg: Swap eggs for flax eggs (2 tbsp ground flaxseed with 6 tbsp water and let sit for 5 minutes). The loaf will have a slightly stodgier texture but still good.
Nuts: avoid adding any nuts. Use seeds instead.

 

Ingredients:


2 eggs
1/3 cup (50g) butter, melted OR 1/3 cup light- flavoured oil
1/3 cup maple syrup (or honey melted)
1 teaspoon vanilla essence
2 large or 3 medium ripe bananas, mashed (the browner the better)
1/2 cup nuts and/or chocolate (I used both walnuts and chopped dark chocolate in this recipe)
1/2 cup natural yoghurt
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of flour (gluten-free or plain or wholemeal)

Method:


Step 1

Pre-heat the oven to 170 degrees on fan bake. Grease a non-stick loaf tin with butter or line with baking paper.

Step 2

In a medium-sized bowl, beat the eggs with a fork then add the rest of the ingredients, except the flour and mix well. Add the flour and combine well with a wooden spoon.

Step 3

Pour batter into the loaf tin and place in the oven for about 40-50 minutes or until the middle bounces back when you touch it. Be patient and allow it to cool slightly before serving.

Tips:

  • Served best warm/toasted with butter or a thick coat of peanut butter. If you are feeling really bananery then top it with an extra sliced banana.

  • For a gluten-free option just use gluten-free flour and check the baking soda is gluten free

  • I also think 1/2c frozen berries could go well in the batter as well.
