Peanut Butter Protein Balls

These delicious balls of peanut buttery goodness are a nutritious snack for any time of the day, perfect for healthy school lunch boxes and especially good when you need a little energy boost. The peanut butter and walnuts are a great source of satisfying healthy fats, the oats add fibre and wholegrain carbohydrate while the raisins add a touch of sweetness and plenty of vitamins an minerals. They take less than 10 minutes to prepare and last up to 2 weeks in the fridge or a couple of months in the freezer.

Ingredients:
1 cup raisins (chopped dates also work well)
Pinch of salt
1 tablespoon honey
1 teaspoon cinnamon
1/2 cup walnuts
3/4 cup rolled oats
4 heaped tablespoons peanut butter (I use Pics)
Can also add 2 tablespoons vanilla protein powder if you like. Just need to add a splash of water as well (about 1 teaspoon or less).

Method:
1. Pulse and blend all ingredients together in a food processor until mixture is sticky. Add a tiny splash of water if you need to.
2. Roll into 10-15 balls using damp hands.
3. Refrigerate for 1 hour before eating (if you can wait that long).
