Black Forest Muesli Bars

I have been working away at this recipe for a while now and I think I have finally perfected it. I wanted to create a tasty muesli bar that I could recommend to my athletes (and myself) pre and post-training but to be honest this is just a great snack/breakfast/anything option for everyone. Feedback always welcome!

Wet Ingredients
1/2c chopped dates
1/2c water
3 tbsp peanut butter (or almond butter)
2 tbsp honey
1 tbsp butter (or coconut oil)
1 tsp vanilla

Dry Ingredients
1/2 cup rolled oats
2 tbsp chia seeds
2 tbsp cocao or cocoa powder
1/2 cup desiccated or threaded coconut
1/2 cup chopped cranberries
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
Pinch of salt

Step 1
Preheat oven to 180 degrees. Line a square baking tin with baking paper.

Step 2
Boil the dates in a medium-size pot with the water, stirring until a mushy date paste forms (about 4-5 mins). Take the dates off the heat and add the nut butter, honey, vanilla and butter. Stir until the butter has melted and everything is well combined.

Step 3
In a large bowl, add all of the dry ingredients and combine. Add the wet date mixture to the dry and combine well.

Step 4
Spread the mixture into the prepared tin, pressing down with the back of a spoon (or use damp hands). Bake for 15-20 minutes. When it comes out of the oven press down on it again with the back of the spoon to prevent it from becoming crumbly.

Step 5
Leave to cool on a wire rack before cutting into bars. It should make between 8-12. If you feel like it, you could always drizzle with some melted chocolate as well 🙂
